The beautiful wedding of Courtney and Patrick was held at one of our own venues, the Chautauqua Dining Hall. The event was full of smiles, and featured a beautiful ceremony in the park followed by a reception in the Dining Hall tent.
The ceremony was held under a gorgeous flowered arbor with a stunning view of the Rocky Mountains serving as a back drop. After the couple said “I do”, the party moved to the Dining Hall for passed appetizers consisting of Three Cheese Toasted Ravioli on a cheese drizzled platter, Bacon Wrapped, Chorizo Stuffed Dates, Spanish Shrimp Tapas, and Burrata Crostinis featuring pesto made with our own Three Leaf Farm Arugula. The couple had photos taken, and then signed the marriage certificate during cocktail hour with guests as their witnesses. Everyone moved in to the tent adjacent to the Dining Hall for dinner at tables named for Colorado ski resorts; dinner featured decor in the form of florals and logs. The plated dinner included a Goat Cheese and Strawberry Salad, Stout Braised Bison Short Ribs or Roasted Trout in Tarragon Cream sauce each served with Rosemary Roasted New Potatoes and Roasted Seasonal Vegetables. For vegetarians, there was Baked Polenta featuring Heirloom Tomatoes, Arugula, and Artichokes then topped with Feta Fondue. After everyone had their fill, the couple cut their Strawberry and Champagne wedding cake. A dessert bar featuring the cake, mini Red Velvet Cupcakes, Cheesecake Bites with Blackberry Compote, and Gooey Butter Cake bites was set out for guest to enjoy while they danced the night away. We could not have been more thrilled to partake in such a fun-filled and loving event!
